Questions customers ask after buying a Specialista

Why am I not getting the extraction I want even after changing grind size?
Treat grind, dose and temperature as a system rather than changing everything at once. Keep the dose consistent, change the grinder one step at a time, then evaluate shot time, flow and taste. If the shot runs fast and tastes thin or sour, go finer; if it chokes or tastes harsh and over-extracted, go coarser or slightly reduce dose.
Is this as easy as a fully automatic machine?
No—and that is the point. Arte Evo grinds for you, but you still manage the portafilter, dose distribution, tamping, extraction and milk texture. It rewards a little learning with more direct control over the cup.
What should be included in the box?
The machine is supplied with the portafilter/filter baskets and De'Longhi's barista accessories such as the dosing/tamping guide, metal tamper, tamping mat and milk pitcher. Check the box contents during setup; if a listed component is missing, contact us promptly rather than assuming it is sold separately.
Can I use plant milk?
Yes. Because steaming is manual, you can work with dairy or plant-based milk. Cold barista-style oat, soy or almond milk is usually easier to texture consistently.

1. Does it have a built-in grinder?
Yes. The integrated burr grinder has 15 selectable settings, so a separate grinder is not required.
2. Is Cold Brew just hot coffee over ice?
No. De'Longhi's Cold Extraction Technology uses a dedicated lower-temperature extraction process to make Cold Brew in under five minutes.
3. Does it tamp automatically?
No. Arte Evo includes a metal tamper and dosing/tamping guide, but you tamp manually. Opera and Maestro add assisted tamping systems.
4. Does it froth milk automatically?
No. Milk is textured manually with the steam wand, giving you direct control over texture.
5. Which temperature setting should I use?
Different roast levels respond differently. A lower temperature is often a useful starting point for darker roasts, while lighter coffees may benefit from more heat. Taste and adjust rather than treating one setting as universally correct.
6. Can I make a double espresso?
The grinder and filter-basket workflow supports single/double dosing; select the appropriate basket and dose for the shot you want.
7. How do I know if I should grind finer or coarser?
Fast, thin extraction generally points toward a finer grind; very slow or stalled flow points toward a coarser grind. Keep other variables stable while testing.
8. What is the main reason to choose Opera instead?
Opera adds Smart Tamping, a stronger commercial-style steam workflow and Espresso Cool while keeping the hands-on semi-automatic approach.
9. Why did the grinder stop dispensing coffee into the filter?
The grinder funnel can clog. Empty the hopper as needed and clean the grinder attachment area and coffee funnel with the supplied brush. Oily beans can make buildup more likely.
10. What if the grinder makes noise but does not grind?
A foreign object may be blocking the burrs. Stop the grinder rather than forcing it, remove the beans and inspect/clean the grinder according to De'Longhi's procedure. Contact service if the obstruction cannot be safely cleared.
11. Why is no espresso coming out?
Start with the basics: confirm the water tank is filled and seated correctly. If the pump runs but flow remains blocked, check whether the puck is overdosed/too fine and clean the coffee outlet before escalating to support.
12. Why does the descale light stay on after I descaled?
The cycle may not have completed correctly. De'Longhi recommends repeating the descaling procedure with water only and filling the tank to MAX for the final rinse stages so the machine can complete/reset the cycle.
13. Why does the machine ask for descaling so often?
Check the programmed water-hardness level. If it is set higher than your actual water hardness, descaling prompts can appear more frequently than necessary.
14. Why does espresso spray or channel from the portafilter?
Uneven distribution, an uneven tamp, too much coffee or a grind that is too fine can force water through weak spots in the puck. Keep dose consistent, distribute evenly and tamp level before changing multiple variables.
15. Why does the steam wand feel weak?
Allow the machine to reach steam temperature, purge condensation before steaming and keep the nozzle holes clean. Dried milk residue is a common reason steam performance drops.
16. Do I need to clean the grinder even if it still works?
Yes. Periodic cleaning of the hopper, grinder chute and attachment area helps prevent buildup and dose inconsistency, especially with darker/oilier beans.
